Yep, since my DH is diabetic, I can explain the phenomenon with the fruit.

There are two different sugar molecules, everything you eat gets turned into one or the other, after the essential nutrients are taken out and fat absorbed. There are long sugar molecules, these are the good ones you find in carbohydrates, meats, and etc. These ones are a longer molecule, so it takes your body longer to break them down and thus, they keep your blood sugar balanced for a longer period of time.

The ones you find in fruit, candy, and processed sugar, are short molecules so your body breaks those down pretty fast, this gives your blood sugar a brief spike then a crash. If you need a quick energy boost, they are great but you should always try to add in something else that will prevent that crash from happening, such as bread, or carrot sticks.

In that respect, you are better with the cookies, than with an apple. Since the cookies also contain some carbs for longer sugar molecules. Of course you are adding in more calories and fat that way, though.
