Ugh, I totally understand that part of it. I was always working such weird hours that I was making my meals separate from theirs anyways, but it was still a hassle...but since it was just me and the kids, it wasn't quite as bad as it would have been with a husband, too.
Then I remarried about 6 years ago...kids are grown, but hubby is a big meat eater...so I still make separate meals..but its not as bad for 2 adults and he will eat some meatless meals...but not tofu!
Ya might try what I did with my hubby...I made some really good meatless meals that were meatless versions of food he loves..like chili...so he eats a meatless meal at least once a week, but he doesn't really miss the meat in something like chili...tacos and burritos work well, too..I can have black beans or avocado or whatever in my taco and he can still have the meat for his...and I'm not making separate meals for tacos or burritos, I am just not eating the meat.
I am one of those people that never really liked meat though, so it was no problem for me as I was used to eating differently for most of my life...I used to hide the meat in my pockets and throw it out or feed it to the neighbor's dogs..
He will never ever stop eating meat
