Make sure veggetables like this are a large part of your diet:

The Japanese eat five times the amount of cruciferous vegetables -- cabbages, broccoli, radishes, cauliflower, kale and other crunchy greens -- than Americans. This huge dietary difference may help explain why Japan has a far lower rate of certain kinds of cancers than cruciferous-avoiding Americans. This class of vegetables contain high levels of glucosinolates, substances that break down to form cancer-fighting chemicals called indolates, which can help lower rates of breast, ovarian, lung and colon cancers. It sounds like you're doing well, Cyn. That's great that you love vegetables!
When one feels like that, they become a great snack.

I only wish our little grocery story had a better selection. Last week I went 40 minutes away to walmart and even the selection there was bad. I really wanted spaghetti squash--none there :(

I've never seen spaghetti squash in my life. When you say that it looks
like the noodle, you don't mean it's that thin, do you? That'd be some
weird squash..

LOL! No, it is a large squash, almost oblong in shape and the spaghetti shaped strands are inside it. You have to scoop them out after cooking.

I love veggies, so does my DH, we will eat salads and green stuff all year long. Wish I could get my son to eat more of them, but he is 10 so green stuff is ICKY!

Hehe yes I understand spaghetti squash now. I saw a picture on the
Google image search a week ago and thought, "oh..... ok looks good."

I'd really like to try a spaghetti squash dish with some sort of italian
flavor, along with some type of chicken salad.
