I got this recipe off of the Betty Crocker website, but revised it to make it low-fat. My entire family LOVES it! I must say - it IS good

Low-Fat Chicken Taco Pie

2 cups cut-up cooked chicken
1/2 c. chopped onions
2 Tbsp. taco seasoning
1 c. Bisquick Heart Smart baking mix
1 c. skim milk
1/2 c. Eggbeaters egg substitute
1 c. shredded Colby Jack cheese

Heat oven to 400 degrees. Grease bottom & sides of a 9" glass pie plate.
Mix together chicken, onion & taco seasoning. Sprinkle in pie plate.

Stir together Bisquick, milk & Eggbeaters with fork until blended. Pour into pie plate.

Bake 30-35 minutes or until a knife inserted in the center comes out clean. Sprinkle with cheese. Bake an additional 1-2 minutes, or until cheese is completely melted. Garnish with lettuce, tomatoes, salsa, sour cream, or whatever else you like.

Makes 8 servings. 158 calories & 5 grams of fat/serving

ENJOY!!!

That one looks very good. I was thinking about using that Bisquick Heart Smart baking mix but I haven't tried it yet... can you tell much of a difference?
