INGREDIENTS:
6 ounces chicken breast, boneless, skinless
1 onion, medium, chopped
2 cloves garlic, minced
2 cups chicken broth, low-sodium, fat-free
2 cups water
1½ cups mixed vegetables, frozen
1 cup egg noodles
Salt and pepper to taste
Cook the chicken, onion, and garlic in a large soup pot that's been sprayed with nonstick spray. Add the remaining ingredients and allow the mixture to simmer until the noodles are done and the soup is the desired thickness.
