I threw the broccoli (yes stem and all) into a food processor and demolished it.
Put the meat (I used turkey) in a pan with the broccoli and brown.
Throw the burrito seasoning stuff in and follow the directions.
Make burrito as usual.
Substitute the sour cream with the non-fat plain yogurt.
A burrito ends up being only around 300 cal. And you have 3 veggies in it (onion, tomato, and broccoli)
I think I'm going to try to "sneak" in more veggies next time.
Oh and my boyfriend hates eating my "diet" foods damn bastard can get away with it too. Anyways I made it for him and he had NO idea it wasn't a plain ol burrito
