Spicy Shrimp Linguine

1 tblsp olive oil
3 medium onions, chopped
6 garlic cloves, chopped
1 (28-oz) can diced tomatoes
1/4 dry red wine
2 tblsp chopped fresh oregano or 2 tspns dried oregano
1/2 tsp crushed red pepper
1/2 tsp salt
1/4 tsp sugar
1/4 tsp coarsely ground black pepper
1 lb. large shrimp, peeled and deveined
linguine (however much you want.....lol)

1. Heat the oil in a very large nonstick skillet.

2. Add the onions and garlic, and saute until golden, about 10 mins.

3. Add the rest of the ingredients except for the shrimp and linguine.
Bring to a boil. Reduce and simmer uncovered for about 15 minutes.

4. Add the shrimp to the sauce and simmer uncovered until the shrimp
are just opaque. It should take about 5 minutes.

While that is cooking start your linguine according to the package. Drain and place in a large bowl. Toss at once with the sauce and then enjoy!

I'm not that big on pasta either. It's so filling and all.... CARBS that make
me feel fat the next day. I also feel slower mentally after a carb "overdose"
like a big pasta dish... and those cream sauces they use.. Ugh. My girlfriend
invented this method of sitting the bowl on a spoon and another plate to
make it tilt over and let the oil+fat stuff drain out of the pasta a bit.

Sounds yummy too me. Would be even healthier with Whole wheat noodles. If you have not tried them, they are good. :grin:
