My DH is diabetic, I personally do not believe he should not be able to enjoy some of his favorite foods just because they are loaded with fats and sugars. I took it upon myself as his wife, to come up with recipes that would enable him to enjoy himself and leave the table full and satiated.

Many of you who have read diet, or diabetic serving sizes now that most of them, when applied to traditionally made foods can be a joke, a tease.

For instance for a regular cheesecake, it is only 1/8th or 1/9th of the pie and that isn't a very big piece for someone with a sweet tooth or craving.

So here is my ultra low-fat, low-sugar recipe. With this one you can have 1/6th to 1/5th of the pie and still not have as much fat, calories or sugar as you do with the traditionals.

Preheat oven to 350°
16 ounces Fat Free Cream Cheese

2 teaspoons your favorite no cal sweetener for baking (I recommend Natrataste as it cooks up nice and tastes just like sugar!)

1/2 Cup egg substitute

1/2 teaspoon vanilla

2 cups crushed low-fat graham crackers for the crust. You need to crush these and then mix with 2tablespoons fat free margerine and press into a pie pan or shallow cake pan.

Mix the first set of ingredients, pour into the crust you have prepared in your pie pan. Bake 40 minutes and cool.

To satisfy a chocolate craving an alternative on this is to melt 4ounces semi-sweet cholate and add it to one cup of the cheese mixture. Pour this layer into the bottom of the pie pain first, then pour over the rest of the cheese mixture.

Sounds good... Cheesecake, but without the thought of my body failing
miserably when trying to make use of all those calories.
