2 cucumbers sliced lengthwise and then into bitesized chunks
2 teaspoons of sugar
rice vinegar (enough to cover the cucumbers)
1/2 small red onion sliced
salt and pepper to taste
1. Mix the sugar and vinegar
2. Add the cucs and onions
3. Salt and Pepper to taste
This is also awesome with daikon radish (cut into cubes).
For the Cucumbers this is best eaten with the next 2 days, but for the daikon radish let marinate for a few days before eating... you can also add chili flakes to the daikon to make it spicy
