Eggbeaters is an egg substitute that is much lower in fat & calories than just a whole egg. And yes Splenda is a low-calorie sugar alternative, just like you thought!

It is kind of scary. I would rather eat whole, regular foods in moderate amounts than substitutes.

Ok, Kiddos. Enough of the delicious sounding recipes! I am going to combine 9reason's ( I realize now she quoted Joy!) and sweet4jay's recipes and make banana pancakes in the morning. I'll let you know what the 'fam' and one houseguest say~if there are any left for them..

Did you know buckwheat is not wheat and is a staple for those with Celiac or gluten-intolerance issues? It is from a an underground plant a bit like a Rutabaga. Ian is RIGHT; it's delish.

Okay this is my report on the low fat banana pancakes.

I couldn't get wholemeal pancake mix so I got ordinary. I could not find banana or almond essence so I added another banana and some ground almonds. I could not find egg beaters so I added one whole egg, and by the sounds of what Kim said, maybe that was a good thing! Lastly, I probably didn't add enough water as the pancake mix was somewhat thick! One good thing though, no extra sweeteners but I did end up dusting them with icing sugar as they needed a little sweetness, probably because I couldn't find the essences!!

So the batter did not make 18 low fat pancakes, rather it made about 8 big fat, half inch thick yummo frisby type things and I had two, Steve had three and we now feel full and blodgy and need the whole day to recover!!! Gee I hope my chromium works well today!!!

However, they were completely yummy and as a rare treat rather than part of a low fat diet... my particular pancakes were fabulous!!!

I was going to, but I am feeling very lazy today. I just ate a banana and some pistachios for dinner. Pretty basic, huh?
