I've had this recipe for about 10 years I bet... and I've made it several times a year and always get compliments on it
12 lasagna noodles
1/2 pound non-fat ricotta cheese
1/2 pound non-fat mozzarella cheese
1 tsp oregano
8/12 ounces low or no salt tomato sauce (OR a marinara sauce that you like)
1 pound ground turkey or chicken
Cook noodles & drain. Mix all ingredients except tomato sauce or marinara. Brown meat and drain if necessary. Mix with cheese mixture. Lay out noodles and spoon mixture at one end and roll up. Spray baking dish with cooking spray and place roll-ups in the dish, seam side down. Cover with sauce and foil and bake for 20 minutes on 325 degrees. Remove foil and bake for 5 minutes. Cover with a little extra mozzarella cheese if desired.
