Ok as you guys liked the photo step by step soup reciepe I posted a while back I promised to do some more photo step by step's and totally forgot, but yesterday remembered so here is a step by step for Coronation Chicken. Although measurements are a lil improvised as I am a terrible cook who rarely measures things.

What you need

Mixing bowl
Curry powder
mayonaise
chicken (altho works well iwth tofu, lamb, turkey and beef)
2 chopping boards (one for the chicken one for fruit)
dried apricots
banana
parsley
oven timmer
mixing jug

Roast the chicken - oven timmer needed so you don't burn it!





Then chop it up into bite size chunks



Chunk the banana and apricots

to 4 large chicken breasts, combine roughly 300grams of mayonaise with 1 and half table spoons of curry powder



Throw the chicken, banana, and apricots in a mixing bowl, pour over all the curry mayonaise and with your hands mix up



Then serve with a side salad and sprinkle with some parsley, you can also add some chopped cashew nuts.

heehhee, you can substitute the mayonaise for double cream or creme fresh (sp* on creme) and then heat, or when I next make a proper chicken curry I will take photo's as it's a different receipe but similar ingredients

If i didnt know better i would think that i am pregnant, i cant tolerate anything!! last night watching king kong i was getting sick and then today i was just thinking about looking at the cooked chicken in this meal and i was like ummmm no way! so im sure its good lea but im not looking!! atleast not today!

I just ventured into your recipe and it sound delicious. Love the combination with fruit. It sound ummmy to me.
I'm going to copy and make it soon.
Connie (sister-in -law) usually cooks. I think that I will try this one myself.
What is the substitution for mayo. Creamy what?

Oh my gosh I just got the full affect of the pictures. It looks great esp the fruit. Now all I need is a smell button on my computer and I'd be in heaven.
