ingredients

3 tablespoons minced fresh parsley leaves( fresh parsley is much better in this than dried parsley)
4 pitted kalamata olives, minced
1 clove garlic, minced
4 to 5 tablespoons lemon juice (I do fresh squeezed it taste much better) to taste
1/2 medium cucumber, seeded and chopped
1/2 medium red or orange bell pepper, chopped
1 medium tomato seeded and chopped
1/3 cup finely chopped red onion
1 ounce (heaping 1/4 cup) crumbled reduced fat feta cheese (you can use fat free feta its 3g less fat but I like the flavor of the reduced fat better)
1 small (4oz) grilled chicken breast sliced (optional)

In a serving bowl, combine the parsley, olives and garlic. Wisk in 4 tablespoons lemon juice. Add the cucumber, bell pepper, tomato, onion, and 3 tablespoons of the cheese. Toss to coat the ingredients with the dressing. Taste and add up to 1 tablespoon more lemon juice, if desired. Scatter the chicken over the salad, if desired. Top with the remaining cheese

this is GREAT I absolutely love Greek salad's it is really yummy with some pita bread

I had my first greek salad yesterday. It was great. Loved the flavor. I don't care for the olives but that is me, but otherwise it was very refreshing and filling. Good choice
