Sweet Hot Tofu

Ingredients:

1 (3 1/2 ounce) bag boil-in-bag long-grain rice
2 teaspoons canola oil
1 (14-ounce) package firm reduced-fat tofu, cut into 1-inch cubes
2/3 cup fat-free, less-sodium chicken broth
1/4 cup hoisin sauce
1 tablespoon sherry
2 teaspoons low-sodium soy sauce
1 teaspoon cornstarch
1 teaspoon honey
1/2 teaspoon dark sesame oil
dash of crushed red pepper
2 teaspoons bottled minced ginger
2 teaspoons bottled minced garlic
1/3 cup thinly sliced green onions

Cooking Instructions:

1. Prepare rice according to package directions, omitting fat and salt.
2. Heat canola oil in a large nonstick skillet over medium-high heat. Add tofu, and sauté 5 minutes or until lightly browned. Remove from pan.
3. Combine broth and next 7 ingredients, stirring well with a whisk.
4. Add ginger, garlic, and onions to pan; sauté 30 seconds. Stir in broth mixture; cook 1 minute or until thickened, stirring constantly. Add tofu to pan; cook 30 seconds, stirring gently to coat. spoon rice onto each of 4 plates; top each serving with tofu mixture. Yield: 4 servings (serving size: about 1/2 cup rice and about 1/2 cup tofu mixture).

Fat: 7.9 g (1 gram saturated fat)
Protein: 14.1 g
Carb: 36.1 g
Fiber: 3.2 g
Cholesterol: 0.5 mg
Iron: 2.6 mg
Sodium: 425 mg
Calcium: 55 mg

Let me know how it turns out for you. I've though about making a transition myself to vegan or semi I just haven't done it yet.

Hey, sometimes it takes some baby steps to transition...give yourself time and don't be hard on yourself.

It was really good, but not very different from what I make all the time once it was done. I used vegetable broth instead of chicken broth.

..and nobody here sells low fat or reduced fat tofu. I always freeze my tofu and then thaw it out and drain it (actually I press it with something heavy to drain it)..or you can drain and press the tofu and then freeze it.

It has a much better texture and it soaks up any marinade like a sponge then, so you get more flavor. I like to dice it up in little cubes to marinate it or little "sticks" if I do it in buffalo sauce.

I like to marinate it in Asian type marinades or BBQ sauce and then bake it too...Yummy!

There are several light or low fat "asian" or "oriental" salad dressings on the market that are good. They make a perfect marinade for the tofu...so does the Lawry's marinade...just get whatever flavor you like.

Never ever eat it right out of the little tub or package....(except silken) cuz its just nasty then.

Thanks for all the info and encourgement. The only problem, I would have is that, I'd be the only one that would want to change.

So that would mean having to prepare all my meals different from the other 5 ppl in my family.

Ugh, I totally understand that part of it. I was always working such weird hours that I was making my meals separate from theirs anyways, but it was still a hassle...but since it was just me and the kids, it wasn't quite as bad as it would have been with a husband, too.

Then I remarried about 6 years ago...kids are grown, but hubby is a big meat eater...so I still make separate meals..but its not as bad for 2 adults and he will eat some meatless meals...but not tofu!

Ya might try what I did with my hubby...I made some really good meatless meals that were meatless versions of food he loves..like chili...so he eats a meatless meal at least once a week, but he doesn't really miss the meat in something like chili...tacos and burritos work well, too..I can have black beans or avocado or whatever in my taco and he can still have the meat for his...and I'm not making separate meals for tacos or burritos, I am just not eating the meat.

I am one of those people that never really liked meat though, so it was no problem for me as I was used to eating differently for most of my life...I used to hide the meat in my pockets and throw it out or feed it to the neighbor's dogs..

He will never ever stop eating meat

I know all about odd hours I use to work graveyard shift jobs most of my working career in the past. Now I'm a SAHM which is one of the hardest jobs you'll ever have.

Especially when you have a 16 yr old teenager in her ish years. Yeah my Dh will never give up meat either. He is a meat and potatoes man through and through.

Thanks for all the sneaky ideas,I never thought about doing some of them before. I love the taco and burritto idea where yall could actually eat the same meal but a little different. When I'm ready at least I will have some good ideas from you thanks again.

Ditto here to, not much for meat either. Ha,Ha, that's to funny because usually it's the vegetables the kids get rid of.lol
