I believe this is also no carbs.

1 bag of frozen cauliflour
2 oz of "I Can't Believe its Not Butter, Light"
2 cloves fresh garlic chopped fine
2 green onions (white and light green parts only) chopped fine
2 oz of Fat Free Cream Cheese
salt and pepper to taste

-Chop cauliflower into smaller pieces and then steam to very tender
(if frozen you can chop smaller after you steamed)
-Melt 1Tlb butter and saute garlic and onions until browning
-Add the garlic/onions, remaining butter, cream cheese to cauliflour
-put in blender
(I'm lazy about cleaning my blender so I use my masher sometimes)

This takes about 7 mins total to cook when I use my microwave steam bag
Its about 4 servings

If you use the same ingredients that I have the whole batch is only 406 cal!!!

I hate my veggies and this is really good and even though I made it mentally it "fools" me into not really realizing its veggies that I'm eating.
So it should fool your kids too.

Garlic Mashed Potatoes

4 cups peeled and cubed potatoes
1 tablespoon minced garlic (or 1-1/2 teaspoons garlic powder)
2 tablespoons - 1/4 cup skim milk
1 tablespoon light margarine (Smart Balance Light is recommended)
2 tablespoons grated Parmesan cheese
1/4 teaspoon salt
dash pepper, to taste

Place garlic and potatoes in a saucepan. Cover with water. Bring to boil. Simmer approximately 20 minutes and drain. Place drained potatoes and garlic in mixing bowl. Add remaining ingredients, beginning with only 2 tablespoons of milk. (Adding more milk will thin the mashed potatoes.) Beat with mixer until smooth.

Yield: 2-4 servings

Serving size of 1/2 cup = 1 carbohydrate choice
