Once blood sugar levels rise after eating, they must then
be stabilized by two hormones: glucagon and insulin. Glucagon
helps to raise blood glucose levels when the bloodstream is
running low while insulin serves as a means of transportation
for excess blood glucose.
For diabetics, there are two possibilities for their condition.
First of all, there could be inadequate levels of insulin
that are released while the second explanation could be the
result of the body's inability to properly utilize insulin.
This is why not only diabetics, but all people should
utilize tools like the glycemic index(GI),
the glycemic load(GL), and caloric
density to help understand and control how food affects
the body and whether or not it should be included in the diet.
Using Glycemic Index
The glycemic index is a scale ranging from
1 to 100 that determines how quickly a food causes a spike
in blood sugar levels. A food ranking lower in the scale(less
than 55) will cause a slower spike while food with a high
GI score will cause a near immediate spike. Intermediate GI
foods fall between 56-69 while high GI foods score above 70.
However, the gylcemic index doesn't encompass enough information
to give an accurate assessment.
